Just keep running

Hello lovelies! It is the best time of the year everyone! September, the beginning of fall, and most importantly; MY BIRTHDAY MONTH! Now, although I am breaching the age of mid-20’s (24 – GASP!) I feel as though I am only able to accomplish more.

With my birthday approaching, there were goals set a year ago to keep up with that I am happily still doing, running, and blogging; although I may fall off the band wagon from time to time, I have been keeping up with both of these for over a year now!

So with those goals still being accomplished (because hopefully I will keep running, and keep blogging), I should probably add a few more to the list. One that has been brewing in my brain is that I need to run my first half marathon by this time next year, so by my 25th birthday: RUN A HALF MARATHON.

So far I am up to 7 miles, but if that is how many miles I can add in a year, then my timing is pretty much perfect. Along the way I certainly want to sign up for more races in between, certainly some 10k’s and 10 milers to warm me up for the whole 13.1.

Luckily I have the time and amazing places in the area to run! Since I do live so close to Washington DC the area provides any number of awesome running trails/ areas throughout Washington, Virginia, and Maryland.

So far, I have only been able to explore a few trails in my area, but one of my favorite weekend past times is to find  a new trail or park and go for a long weekend run. Here are some of the ones I have gotten checked off my list so far!

Burke Lake park, is a great 4.5 mile trail around the lake. It is pretty flat and usually pretty crowded but it is a great loop, for a quick easy run with a gorgeous view. Another fun aspect about this park is the exercise stations throughout one half of the trail.

Great Falls park (VA Side), is SO close to my apartment, I absolutely love it, with its absolutely beautiful and interesting terrain (can be very rocky, can be very wooded depends on where you are in the park) but it is difficult to be in such a beautiful place and not love it. The park is always pretty crowded, and there is an entry fee (depending on the time of day) but if you live in the area, certainly add Great Falls to the list of fun run places!

The Washington and Old Dominion Trail (W&OD Trail for short) is a seriously bikers trail that winds all through out Loudoun and Fairfax county. WIth its many access points, and accessibility it is far more popular with bikers than your standard runner. You certainly feel as though you are vying for your space on the road against the bikers. However it is relatively flat, and great to really work out some distance. The only downfalls are that it is only shaded in the morning (that is some HOT pavement) and it is just straight, it goes on forever and ever so eventually you have to just turn around and do it all again. (me personally I love a long loop if at all possible)

And most recently I have tried out a great trail right across the water from the city with incredible views! The Mount Vernon trail runs right along the Potomac and gives you an awesome view of the monuments right across the way! The trail is nice because you have the option to run in VA or into DC, you can also go explore as a detour on Theodore Roosevelt Island. However the day I went, was incredibly hot and almost unbearable but the view was so gorgeous, I will have to go back many more times to explore!

One of the best events of the year! The Summer Lilly Pulitzer Sale!

Ladies, ladies, ladies, its one of the best times of years for all of us Lilly lovers out there! Last summer I am really not sure where I was or what I was pre-occupied with but I missed the sale and I was throughly depressed.  I was not going to let that happen again! So this time I was much more on my game and up and ready to shop when the sale started at 8 am!

IMG_4857But as it always happens, the Lilly site crashed! It was a tragic start to my day. I could shop but I wouldn’t be able to add to my cart. Stressful, exciting, saddening. But not to fear the day was eventually saved when I was able to shop at lunchtime. But one dress I had my eye on in the morning had already been completely snapped up before I was able to actually shop but I still scooped up a few very cute finds at an amazing deal!

I got this super cute and super versatile striped dress – the Kaleb Dress I am super excited to sport this in the fall, even with the super springy colors!

Followed by another wonderful dress just itching for spring to start again was the Darcy Dress, perfect if I am ever invited to a tea or to attend the horse races, whenever wherever!

And a very cute top that I am in need of more of, I am an avid shopper for my bottom half – I have a colored shorts and pants addiction – however I need tops to mix and match as well. This Drew top will be the perfect addition to my collection, of small but growing perfect tops for any occasion.

Now, all I have to do is wait and wait and WAIT for this wonderful order to be processed and delivered! Love love love everything that I ordered and I can not wait to wear all of it! Go Ape!

So back in the beginning of the summer I told my roommate that I would take her to this zip line and ropes course in our area called Go Ape! as her birthday present from me, 3 months later we finally got around to it. This place was awesome! It was exhausting, nerve racking, exhilarating, and awesome! We went to the course located in Rock Creek Park, MD. There were 6 different obstacles ranging from zip wires and Tarzan swings into rope ladders, to crawling through a wooden tunnel and walking a wire, all in the tree tops.

So you get there and you sign your life away, but that is to be expected, swing at your own risk of course. And you go into a quick preview of what you have to do to survive in the trees  taught by great instructors, and you go. You climb up, swing across, balance your way through to the final goal of zip lining through the tree tops.

I was pretty scared for the first course or two, and gained my confidence as the courses progressed. You have to make sure you are all hooked in or else falling to your doom, (I’m probably be a little dramatic but still the idea remains).  All in all it was so much fun and I would recommend this to anyone who doesn’t have a slight fear of heights.

It definitely makes me want to get out and find more ropes courses and things of the like, it was challenging and a great form of exercise while also fueling that adrenaline thrill; Go out there and Go Ape!

A Plethora of Gluten Free Deliciousness!

It’s been a long time since I have done a post of my original reason for blogging, Gluten Free! It is something I have been embracing now since the Spring of 2011 so more than 2 years now!  I have experimented a lot but every so often I find a gem that absolutely must be shared! (as well we some delicious snacks I have found here lately!)

First as a delicious (BUT SPICY) snack, I thought it would be fun to try a gluten free twist on a jalapeño poppers. They turned out different but delicious! Not too many ingredients but the wraps were a little more difficult to locate.

Gluten-Free Jalapeño Poppers!

You will need:

– Jalapeños (1 per popper, so get as many as you intend to eat… I would recommend sharing they are hot, hot!)

– Cheese sticks!

– Rice paper (spring roll) wrappers (I found mine at the World Market section of Bed, Bath, & Beyond)

– canola or peanut oil

– 2 good sized sauce pans

Directions:

To prep: heat canola oil in one sauce pan, and water in the other:

1. Cut the ends off, slice in half longways, and gut the jalapeños.

2. Cut a cheese stick in 1/2 and put 1/2 of it in between the pieces of a jalapeño and place them back together

3. You will need to soften the rice wrappers in the hot waters for moments to be able to wrap the popper in it. Once you have done that you wrap up the jalapeño/cheese duo and drop it in the very hot oil.

4. You will roll the popper around until crispy (chop sticks work great for this!) and let dry on a paper towel.

5. The repeat!

**for extra crispiness I wrapped and fried them again.

Once complete – serve with ranch and enjoy!

Another dish that I experimented with this week was something you can’t really go wrong with whether you are gluten free or not… drum roll please:

Cheddar Bacon Chicken!

It was so easy, and SO delicious! I found the recipe of a great blog called Gluten Free in Utah, her site is great and full of wonderful tips! For example I did not even know Glutino carried a type of Pop-Tart, exciting!!

This took barely any prep and I could eat it for days, you will need:

– Chicken breasts

– Cheddar cheese

– Bacon

– Onions and bell peppers

– salt/pepper/garlic powder

Directions:
1. Cook up the bacon, I cooked up 1/2 a pack for 2 people and 2 chicken breasts

2. Once you have cooked the bacon, remove and let it cool and get crispy

3. Cook up the peppers and onions in the bacon grease, once those are tender put those aside

4. Then cook the chicken breasts in the rest of the bacon fat and juices from the veggies, you can season with salt, pepper, and garlic powder, and let that cook for a while until chicken is cooked through and tender

5. The in a greased pan lay the chicken down, top with the peppers, onions, bacon, and cheese. Then bake at 350 degrees until everything is melted.

Serve and enjoy!

So Happy Halloween everyone! 🙂 Unfortunately I have to work tonight, maybe celebrating after, who knows? Anyways! This lovely month of October I did the Instagram photo a day challenge, which was as follows:

Day 1: You, now. Here is the best and most recent picture (although not so much at this point ;)) of me and my pledge sister.

Day 3: Far Away. Visit to Seattle in 10th grade, one of the best trips of my life.

Day 6: Everyday. My planner and my phone are two things I use everyday for everything.

Day 9: Something you do most weekends. Work as a day of event and wedding go to girl! It is wonderful and I absolutely love it!

Day 10: Black and white, me and my friend Paige went and got Blueri froyo!

Day 11: Hero. Shannon Miller was my hero growing up, I idolized her as a gymnast and it was incredible to  meet her and to have her coach me at IGC. She is still an inspiration today successfully battling cancer.

Day 12: Together. Even if I feel completely alone I know I have you 5! My life. My heart. My home. LO6 lubuil.

Day 13: Table. Cute table settings at the last wedding of the season!

Day 14: Favorite. Dubbie ( 😦 ), Cosmo, Queso, and Alice! (and extra Kiki).

Day 15: First thing you see. It was Dublin my baby kitty but she got snatched up by a terrible woods creature who thought she would be a nice meal 😥 so very sad. I miss her.

Day 16: Strange… I couldn’t find anything else. I don’t think this needs an explanation for strange…

Day 17: In my fridge, lotsa stuff, and lotsa stuff I can’t eat.

Day 18: (late again.) Prices! Prices at King Street Coffee with GF mini loaves!

Day 19: Underneath. Underneath this ugly warehouse roof is the largest collection of vintage carriages in the US!

Day 20: Man-made. Keys are man-made, keys to all the cool things at my work.

Day 21: Sometimes. Sometimes I blog 😉 #gfp

Day 22: Up. Up the movie, is so cute!

Day 23: Before Bedtime: Netflix

Day 24: 3 Things. Even though today at the Battlefield was pretty awful… here were 3 pretty parts.

Day 25: Frame. cute frame used as an armoire tray!

Day 26: Near. It’s nearly Halloween!

Day 27: Love/ Hate. I hate a love hate relationship with running.

Day 28: A good thing. OMG THESE ARE DELICIOUS! I have been thinking about buying these as long as I have been gluten free but could never bring myself to pay $7 for donuts! Thanks Mom and Dad 😉

Day 29: Errand…No errands today! Stuck inside thanks to Hurricane Sandy. Carved a kitty pumpkin instead! 🙂

Day 30: You, Then. Dad and I carving pumpkins just like we did last night!

Day 31: HALLOWEEN! If I were going out tonight I would want to be Effie Trinket from the Hunger Games!

{Gluten Free Pumpkin cupcakes}

So with everyone everywhere talking about pumpkin it seems, I decided to experiment with a little pumpkin treat myself.  I found these on Pinterest, big surprise lol! And needed to make a special treat for a close friend who is also gluten-free! Yay! So these were an obvious choice!

GF Pumpkin Cream Cheese Muffin/Cupcakes

(props to Silvana’s kitchen, where I found the original recipe)

INGREDIENTS

For the filling:
8 oz. cream cheese, softened
1 cup confectioners’ sugar

For the muffins:
3 cups rice flour mixture
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. ground cloves
1 tbsp. plus 1 tsp. pumpkin pie spice
1 tsp. salt
1 tsp. baking soda
4 large eggs
2 cups sugar
2 cups pumpkin puree
1¼ cups vegetable oil

Frosting: Cream cheese frosting (the original site has a homemade frosting that I did not have time to experiment with so I stuck with a traditional favorite!)

(you will also need an electric mixer, and cupcake pans duh! 😉 )

1. Place a rack in the lower third of the oven

2. preheat to 350 °

3. Line muffin pan(s) with cupcake cups

4. In one bowl, mix the cream cheese and confectioners’ sugar for 3 minutes. Beat in 1 egg white and ½ teaspoon vanilla.

5. In another bowl, whisk the rice flour, pumpkin pie spice, baking powder and ½ teaspoon salt.

6. In a third bowl, mix the pumpkin puree, 2 eggs, granulated sugar, oil and 1 teaspoon vanilla.

7. Whisk in the rice flour mixture.

8. Layer each muffin cup with some of the pumpkin batter (just a small spoonful, enough to cover the bottom of the muffin cup)

9. then layer some of the cream cheese mixture (again not too much you don’t want to run out and or have these things over flow)

10. FInally, add more of the pumpkin batter.

11. Bake until springy to the touch, about 25 minutes.

12. Let cool.

13. Frost early, to eat and enjoy warm!

Don’t forget to refrigerate to keep them fresh, and frost as you please! From the friends who have tried them, they all said they were good. Next time I mad add a little something to give them a little more lightness to the pumpkin batter but they are still so good! Cold, and heated up in the microwave later on; Also good without the frosting on top as a nice breakfast muffin 🙂

{Running shoes, and the Real World}

So as I excitedly proclaimed in my last post, September is my birthday month! Yipee! And as unfortunate as last year’s 16 candles-esque 22nd birthday was, I have set my standards a little lower. Why you ask? Well because unfortunately birthdays aren’t as cool or as important as you get older and that is a sad fact that we all have to come to terms with eventually. Heck, I am working a wedding on my birthday at my new job, but I am going to love that because I love my new job :):). BUT last year is no less of a reason to not LOVE my birthday month because 1. last year was weird, a lot of things have changed for the better since then and; 2. September is always a season of change and new beginnings, usually it is due to the beginning of a new semester, but as a post grad it is the beginning of my new career. Although it does not feel the same sense of a refreshing new start, it is still a new start none the less.

HOWEVER since, I rambled off topic completely there for my intro! Although my birthday is not until the end of the month, between now and the 22nd my Mom and I had 1 day that we could plan to go pick out my birthday running shoes and that was this week. A few weeks too early and these shoes will be well broken in by my birthday, my parents treated me to a proper fitting at The Running Store and a new set of awesome Saucony Omni 11 running shoes. I AM OBSESSED. As a former gymnast, having to stop after a completely reconstructed foot and a torn ACL/Meniscus I never thought I would be able to run without pain in my foot and my knee, but these shoes made all the difference! My endurance is still not up to par but it is definitely getting there now that I can run without wanting to chop my foot off.

So Happy early Birthday to me love my parents, free exercise for the rest of my life, HA!

So it is a beautiful day, I ran two miles am going to Yoga it up after I post and then maybe some swimming before closing up the pool. Forever a lifeguard, can’t wait to be full time as an Event Coordinator! 🙂

{September is for Birthdays}

Yay! First blog of my 23rd birthday month, I really don’t feel like I am turning 23…honestly it still seems weird to be able to buy alcohol HA! I have been slowly but surely adding things to my ‘wish list’ but it really does get harder with age!

 

But for today’s blog I am sharing with you my very first gluten free success right after I was diagnosed with celiacs in 2011. A friend at the YMCA gave me this recipe because I told her pizza was what I missed the most; many have said that it reminds them more of a pizza casserole or even GF lasagna however, this is Zucchini Crusted Pizza 🙂 I am making it tonight for me and mama dearest.

Ingredients:

– Olive oil and rice flour

– 2 cups of shredded zucchini (packed tightly)

– 2 eggs (mostly egg whites, a little egg yolk)

– 1/4 Cup rice flour

– 1/2 Cup grated mozzarella

– 1/2 Cup grated Parm cheese

– pinch of basil, oregano, italian seasoning to taste

– pizza sauce

– toppings optional

**Pre-heat over to 400 degrees

Step 1: grate 2 cups of zucchini, lightly salt and dry for 15-30 min

Step 2: mix together zucchini, rice flour, eggs, parm cheese, moz cheese, seasonings, and 1 tblsp olive oil.

Step 3: Spread zucchini mixture in a 9×12 pan bake for 30-45 min, or until firm

Step 4: Paint top of firm zucchini mixture with olive oil

Step 5: broil for 1-3 min or until golden brown on top

Step 6: Add pizza sauce, cheese, and additional toppings

Step 7: Bake at 400 degrees until top ingreidents are baked through

LET COOL!!!! STAYS HOT FOR A LONG TIME!!!! And enjoy 🙂 YUM! I had a side salad with it and made some bootleg Olive Garden salad dressing, Supreme! 🙂

{Things that make me happy: BIG gluten free sections}

SO these past few days have been the Annual Lilly Pulitzer sale and normally I go out all, however I am running low on funds and so the approximately $50 that I had budgeted for this fabulous sale went towards a rendezvous at Wegmans! And this was only due to this unfortunate event… Don’t worry Lilly P. my funds will come you way at some point… just not this week…

Since I have been gluten free for roughly a year and a half now due to being diagnosed with Celiac’s disease, I have to shop at selective places because some grocery stores have not started to carry GF products. So basically Wegmans is one of my favorite because of the large selection of gluten free goodies that they carry. Some of the gems I picked up the other day have all been delicious so far!

I picked up some Gluten Free English Muffins by Foods by George which were not exactly full of nooks and cranny’s like I was thinking of traditional English muffins but they are definitely good. I prepped mine with some butter and peach jam! 🙂  These could also be perfect for little breakfast or lunch sandwiches.  Another venture is these would be the perfect accent to Gluten Free sausage gravy yum!! (adventure with that in future posts). 

I also got some Wegman’s brand fruit flats, some more gluten free cake mix, and the favorite that I have tried so far is a gluten free instant oatmeal! Instant oatmeal was one of my favorite fall breakfasts growing up and I was not sure if I would be able to eat traditional instant oatmeal. So finding this delicious gluten free Ec0-Planet instant oatmeal, apple cinnamon flavor of course.

I always love trying new gluten free things, there were more purchases than just those but they are escaping me at the moment. #glutenfreelove

Another thing that I have been doing to help me heal after my recent break up, it may be corny but it is a pinspired idea I found and thought it was perfect. It is the ‘positive thing a day’ jar 🙂 everyday you write something down that was happy, even something as small as playing with bubbles at work to getting a new kind of gf treat 🙂

Weekends are for blogging, running, and interview think tank sessions

As I mentioned in my last post the upcoming day was all about a shopping spree, and big surprise I am a day late and a dollar short with that blog post. I did however score some really cute items that can cross the lines of professional but also cute enough to wear to other events.  One of these outfits I wore Friday to an interview, hopefully it gave me bonus points here is the:

Although I have forever been in awe of people who are capable of running as an exercise and loving it and have always been convinced that I could never be one of those people, I am out to prove myself wrong.  I signed up for Mapmyrun.com today and plan on using it! This morning I got up, had my morning coffee, and ran/walked 1.8 miles! So I have yet to come up with a goal but I am researching 5k in the fall so maybe something along those lines. 🙂 in the mean time I have been doing research on running shoes best for flat footed women and I think I am going to invest in these Brooks Adrenaline GTS 12’s?

But that will def have to wait for either a present holiday or a bigger paycheck 😉 For now I will keep on attempting to run so I can look cute in all these cute preppy work clothes I just got !
